Sauce Choron

The science

Tomato adds acidity, color (a rosy-orange hue), sweetness, and umami to the Béarnaise base; the tarragon reduction still underpins it, but Choron is typically finished smooth and red rather than flecked with green herb. It is the emulsion family's parallel to Sauce Aurore — the recurring "add tomato" motif applied to yet another mother.
