Recado Rojo (Achiote Paste)

What it is

A dense, brick-red spice paste from the Yucatán Peninsula, built on annatto (achiote) seed — the defining marinade of Mayan-Mexican cooking, sold in hard blocks that are dissolved before use.

How it's made

Ground annatto seed (for color and earthy flavor) combined with garlic, oregano (Mexican), cumin, clove, allspice, black pepper, cinnamon, and salt, bound with a little vinegar or bitter-orange juice into a stiff paste, then pressed into bricks.

Flavor profile

Earthy, peppery, and warmly spiced with the distinctive mild, slightly peppery-nutty annatto flavor and a deep red color; balanced by the acidity of the bitter orange it's mixed with.

Culinary uses

The marinade for cochinita pibil (achiote-and-citrus pork wrapped in banana leaf and pit-roasted), pollo pibil, and tacos al pastor-adjacent preparations. How to use: the brick is thinned with bitter-orange juice (naranja agria) or vinegar into a marinade, applied for hours to overnight before slow-roasting or grilling.

Regional variations

The Yucatecan recado family includes several "recados" (seasoning pastes) — recado rojo is the red/achiote one; there are also recado blanco and the dramatic recado negro (below). Heat and citrus balance vary by maker.

Cultural & historical context

Achiote/annatto has been used by the Maya for color, flavor, and ritual (and as body paint) for thousands of years; recado rojo is a direct descendant of pre-Columbian seasoning practice, layered with Spanish-introduced spices and citrus. Cochinita pibil — its signature dish — is one of Mexico's great regional treasures.

Sourcing notes Sold as hard bricks (El Yucateco, La Anita, and others) at Mexican/Latin grocers; keeps very well. Homemade is possible but the commercial bricks are authentic and convenient.
