Ravioli
What it is
The archetypal stuffed pasta: filled pillows — typically square or round — formed by sealing filling between two thin sheets of egg pasta (or folding one sheet over). The umbrella term for filled pasta in much of Italy and abroad.
How it's made
Two sheets of egg-pasta sfoglia are laid out, mounds of filling dotted across the lower sheet, the upper sheet pressed down to expel air around each mound, and the pieces cut and crimped (square with a fluted wheel, or round with a cutter). Fresh; boiled briefly. The seal must be airtight or the raviolo bursts.
Flavor profile
Tender, silky egg-pasta exterior giving way to a soft, flavorful filling; the textural contrast of delicate wrapper and creamy or meaty center is the whole point. Eaten in butter or light sauce so the filling leads.
Culinary uses
Classic fillings include ricotta-and-spinach (ravioli di ricotta e spinaci), meat, and seasonal vegetables; dressed simply with butter and sage, light tomato, or a meat sauce so as not to overwhelm the filling. Larger or richer ravioli become a primo centerpiece.
Regional variations
- Ravioli del plin (Piedmont) — tiny, pinched (plin = pinch), filled with roast meat.
- Ravioli di magro — "lean," cheese-and-greens filled.
- Ravioli Caprese (Capri) — caciotta cheese and marjoram, no meat.
- Genoese ravioli — meat-and-greens, a Ligurian classic.
Cultural & historical context
Ravioli appear in Italian records as early as the medieval period and spread across nearly every region, each adapting filling and shape to local larders — making "ravioli" less one dish than a technique. Its near-universality and endless regional fillings make it the keystone of the entire stuffed-pasta family.
