Pearl Onions

What it is

Tiny, round, marble-sized onions (Allium cepa, and the related Allium ampeloprasum for some "pearls"), typically under an inch across, in white, yellow, or red. Sold fresh in net bags, frozen (peeled — a huge convenience), pickled (cocktail onions), or jarred.

How it's made

Grown densely so bulbs stay small, or harvested as small immature onions. Their tedious peeling is the universal complaint, solved by a 30-second blanch and squeeze, or by buying frozen peeled. Pickled pearl onions (often in vinegar) become the cocktail "Gibson" garnish.

Flavor profile
