Pandan-Scented Rice
What it is
Less a distinct cultivar than a technique-defined category: ordinary white rice (often jasmine) cooked with knotted leaves of pandan (Pandanus amaryllifolius) to perfume the grain. The cooked rice is tinged faintly green at the edges where the leaf rested and carries an intensified aroma.
How it's made
A few fresh pandan leaves are washed, knotted, and buried in the rice during the absorption cook, then removed before serving. Some commercial "pandan rice" products are jasmine rice scented or blended with pandan extract.
Flavor profile
The pandan leaf is naturally rich in 2-acetyl-1-pyrroline — the same aroma compound that defines basmati and jasmine — so it deepens the grassy, vanilla-coconut, nutty fragrance the variety already has. Taste is subtly sweet and green.
Culinary uses
Standard across Indonesia, Malaysia, Singapore, Sri Lanka, and Thailand for festive and everyday rice, and the natural partner to nasi lemak components and rendang. Pandan is also used to scent coconut rice and desserts. Water ratio follows the base rice (jasmine ~1:1.25–1.5).
Regional variations
In Indonesia/Malaysia, pandan is paired with coconut milk for nasi lemak base rice; in Sri Lanka, rampe (pandan) joins curry leaf and lemongrass; some Vietnamese sweet sticky rice (xôi lá dứa) is colored and scented green with pandan.
Cultural & historical context
Pandan is sometimes called "the vanilla of Southeast Asia." Its use to scent rice is a centuries-old kitchen craft that predates synthetic flavorings and reflects a regional palate built around layered green, coconut, and floral aromatics.
