Mealworms (Tenebrio molitor)
What it is
The larval stage of the mealworm beetle (Tenebrio molitor), one of the most extensively studied edible insects in Western food science and the first insect species to receive EU Novel Foods authorization for direct human consumption (as a snack food and ingredient).
Tenebrio molitor (yellow mealworm, family Tenebrionidae). The larval stage lasts approximately 3–4 months before pupation; it is this larval stage ("mealworm") that is the food product.
Food uses & preparation
Mealworms are farmed on grain-based substrates (wheat bran, oats) at room temperature. They are relatively slow-growing compared to crickets (approximately 10–12 weeks to harvest size), which affects production economics, but they are well-tolerated at high density, compatible with humidity, and produce a product that is texturally and visually less challenging for Western consumers than whole crickets. Mealworms are harvested, killed by freezing, dried or roasted, and sold whole or ground.
Mild, slightly nutty, with a faint earthy quality. The flavor is less pronounced than crickets, making mealworm flour an effective "stealth" insect ingredient in products where a strong insect flavor would be undesirable.
Nutritional Profile: Protein: 47–60% dry weight. Fat: 28–47% dry weight (higher than crickets, with a favorable unsaturated fat profile). B vitamins. Iron, zinc, potassium.
EU Authorization: The European Food Safety Authority (EFSA) authorized dried yellow mealworms as a novel food in January 2022, following a comprehensive safety assessment. The authorization includes use as a snack, as a powder/flour ingredient, and within specific food categories. Labeling must indicate mealworm content and include cross-reactivity warnings for shellfish and house dust mite allergens.
Whole roasted mealworms as snack foods; mealworm flour as an ingredient in pasta, bread, crackers, and protein bars; mealworm-based animal feed (a separate and larger market). In Southeast Asian traditional contexts, mealworms appear as one of the less-common street food insects.
