Marmite & Vegemite (Yeast Extract)

What it is

Dark, thick, intensely savory spreads made from concentrated yeast extract — the famously polarizing "love it or hate it" condiments. Marmite is British; Vegemite is Australian. Both are near-black, sticky, and salty.

How it's made

Spent brewer's yeast (a byproduct of beer making) is autolyzed — its cells broken down to release a glutamate-rich extract — which is concentrated and seasoned. Marmite is essentially yeast extract with vegetable/spice additions; Vegemite adds vegetable extracts and a different spice profile, making it less sweet and saltier-sharper. Both are vitamin-B-fortified.

Flavor profile

Overwhelmingly savory, salty, and umami with a malty, meaty, fermented depth; Marmite is slightly sweeter and rounder, Vegemite saltier and more bitter-sharp. Intense — meant to be spread thinly.

Cultural & historical context

Yeast extract was born of the late-19th-century discovery that brewer's yeast could be concentrated into food (Liebig's process), turning a brewing waste product into nutrition. Both spreads became wartime and childhood staples and national symbols — Vegemite especially is woven into Australian identity (immortalized in song), and "Marmite" entered English as a metaphor for anything divisive.
