Kokum Water (Konkani / Goan Souring Agent)
What it is
A tart, cooling, deep-purple-to-pink souring liquid made from kokum — the dried rind of Garcinia indica, a fruit of India's western coast — central to Konkani, Goan, and coastal Maharashtrian cooking and far less known than tamarind.
How it's made
The fleshy fruit rinds are sun-dried (sometimes to a dark, sticky state called amsul, or salted into birinda) and then soaked in warm water to release their sour, fruity essence, yielding a pink-purple extract. The soaked rinds may also be added directly to a dish to simmer and sour it.
Flavor profile
Pleasantly sour and fruity with a subtle sweetness and a distinctive clean, almost astringent tang — milder and more refined than tamarind, with a cooling quality. Lends a beautiful pink hue to coconut-based dishes.
Culinary uses
